This month has been filled with lots of travel and catching up with old friends. It has been a whirlwind and I must admit that I haven't been in the kitchen much. It's great to be home now and I can't wait to start cooking again but was nice to step away from our everyday life to take a moment to recharge.
Our latest escape took us to beautiful Denver, Colorado, and into the Rockies for a few days. It was truly peaceful and Denver reminded me so much of the Midwest. Also, there were so many amazing restaurants with gluten free options, I hardly felt my usual vacation anxiety. If you find yourself in Denver, check out my two favorites--Panzano and Jelly Cafe. I'm still dreaming about the food.
While I work on throwing together a few recipes for you, I hope these photos can help you take a mini vacation. Also, I'm excited to be IAmJTheBlog's third feature of the month. If you haven't already stopped by, please do so and check out her interview with me. J has so many great resources too, so poke around her site while you're there. I know you'll find something new and helpful. I always do!
